Recipe: Pancakes


serves 4 (2-3 pancakes each)

Paleo Cafe Pancakes
Serves 4 (2-3 pancakes each)

6 x Eggs
2 cups Almond Meal
150ml Almond Milk
1/4 cup Honey

To make the pancake batter, mix all ingredients together well using a stick blender (use electric mixers or a whisk if you don’t have one). Let batter rest in the fridge for 20mins before heating a nonstick pan on a medium temperature. Lightly grease the pan with coconut oil, pour in enough batter to make a pancake aprox 10cm across and cook for 2-3min before flipping or another couple of minutes.

Serve with maple syrup, fresh fruit and coconut yoghurt.
